130. Fermentation Box

TAFO, GHANA, 2003. Testing out a technology seen more in South America than in West Africa… fermenting in a wooden box at CRIG, Cocoa Research Institute Ghana. This would be less of an appropriate technology than the classic West African method of lining the forest floor with banana leaves, dropping the freshly harvested beans in a pile, then covering with more banana leaves because it assumes the farmer has the financial wherewithal to hire a carpenter.
