238. Fufu Pounding

ACCRA, GHANA, 2014. Pounding cooked cassava into fufu. Cooking the root gelatinizes the starch granules and pounding the cooked root causes the starch granules to burst. The result is a wonderfully gluey accompaniment to cooked meat and soup, a wonderfully flavorful broth.
